Ingredients
  • 1 large celery stalk, chopped
  • Half of a yellow onion, chopped
  • Half of a red pepper, chopped
  • ½ cup shredded cheddar cheese
  • 11oz can shoepeg corn, drained
  • 14oz can french cut green beans, drained
  • 10.75oz can condensed cream of celery soup
  • 8oz sour cream
  • Salt and pepper to taste
  • 1 sleeve Ritz crackers, crushed
  • ½ cup butter, melted
Preparation
  1. Preheat oven to 350 degrees F and grease a 8x8 baking dish.
  2. In a large mixing bowl, add celery, onions, red pepper, cheese, corn, greens beans, condensed soup, and sour cream. Mix well and season to taste.
  3. Transfer the mixture to the prepared baking dish and sprinkle the crushed cracker over the top. Pour the melted butter on top of the dish and bake for 45 minutes.
