Ingredients
  • 4 large Yukon Gold potatoes
  • 3 tablespoons extra virgin olive oil
  • 3 teaspoons minced garlic
  • 2 tablespoons rosemary (dried or fresh, cut finely)
  • Kosher salt and black pepper to taste
Preparation
  1. Preheat the oven to 400°F. Peel and cut the potatoes into 1-inch cubes, then place in a medium-large mixing bowl.
  2. In a smaller mixing bowl, combine the olive oil and garlic and pour over the potatoes and stir thoroughly until the potatoes are well coated.
  3. Sprinkle liberally with rosemary, salt and pepper, then stir again. Repeat the process until there’s an even coverage of herbs over the oiled potatoes.
  4. Place the parmentier potatoes onto a sheet pan covered with parchment paper and bake for 20 minutes.
  5. Remove the potatoes from the oven and toss thoroughly on the sheet pan. Apply more rosemary, salt, and pepper. Continue baking for 25-30 minutes or until golden brown.
  6. Garnish with a rosemary sprig and serve immediately as a side dish.
