Ingredients

  • 2/3 cup cherry tomatoes
  • 1 medium zucchini, halved and sliced 1/4-inch thick
  • 1/2 yellow onion, sliced
  • 6 slices bacon
  • 1 tablespoon olive oil
  • 6 large eggs
  • 1/2 cup milk
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 cup sharp cheddar cheese, grated
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  1. Preheat oven to 375°F.
  2. Arrange bacon, tomatoes, onion, and zucchini on a 9x13-inch rimmed sheet pan. Drizzle vegetables with olive oil and toss to coat.
  3. Bake until zucchini is tender and bacon is crisp, about 20 minutes.
  4. In a bowl, whisk together eggs, milk, salt, pepper, chives, and parsley.
  5. Chop bacon into pieces and arrange evenly on sheet pan with veggies.
  6. Pour egg mixture over bacon and veggies and top with cheddar cheese.
  7. Bake until eggs have set, about 20 minutes. Slice into squares and serve. Enjoy!
