Ingredients
  • 2 cups mozzarella cheese, grated and divided
  • 8 oz cream cheese, softened
  • 1/2 cup ricotta
  • 1/4 cup + 1 tablespoon parmesan cheese, grated and divided
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • kosher salt
  • 1 can refrigerated biscuits
  • 1 block mozzarella cheese, cubed
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon parsley
  • 1/4 cup marinara sauce
  • 1/4 cup pepperoni, sliced
Preparation
  1. Preheat oven to 350°F and set aside a cast iron skillet.
  2. In a large bowl, combine 1 1/4 cups of the mozzarella, the cream cheese, ricotta, 1/4 cup of the parmesan, the Italian seasoning and red pepper flakes. Season with salt and stir to combine. Set aside.
  3. Flatten each biscuit and wrap around a cube of mozzarella. Form into a ball and place in a ring around the outside edge of the cast iron skillet.
  4. In a small bowl, mix together the olive oil, garlic, and parsley, and then brush onto the biscuits.
  5. Scoop dip mixture evenly inside the ring of biscuits and spoon marinara sauce over the top. Sprinkle remaining mozzarella and parmesan over the top, along with the pepperoni.
  6. Bake until biscuits are golden, about 30 minutes. Brush with more olive oil halfway through, if needed. Let cool 10 minutes before serving. Enjoy!
