Ingredients

  • 4 cups fresh or frozen raspberries, thawed
  • 1 cup granulated sugar
  • 1/3 cup apple cider vinegar
  • Juice of one lime
  • 1 1/2 cups cold water, divided
  • 1 liter ginger ale, chilled
  • Ice for serving, optional

Preparation

  1. In a medium-sized saucepan, add raspberries, sugar, apple cider vinegar, and lime juice. Bring to a boil and mash berries. Reduce to a simmer and cook uncovered for 15-20 minutes.
  2. Use a fine mesh strainer to strain out seeds, then chill berry mixture for 30 minutes.
  3. When ready to serve, mix berry mixture with 1 cup chilled water and ginger ale. Serve over ice with a fresh raspberry garnish.
