Ingredients
  • 1 cup sugar
  • ½ cup butter, room temperature
  • 3 eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 ½ cups fresh raspberries
  • 1 tablespoon sugar
  • Whipped cream for garnish
Preparation
  1. Preheat oven to 350 degrees F and lightly grease an 8x8-inch baking dish.
  2. In a large bowl, beat together sugar and butter until light and airy. Whisk in eggs one at a time until smooth.
  3. In a small bowl, sift together flour, baking powder, and salt, then slowly add the dry ingredients to the wet until fully combined.
  4. Transfer batter to the prepared baking dish and pour raspberries on top. Lightly press berries into batter and sprinkle with remaining 1 teaspoon of sugar.
  5. Bake for 45 minutes or until golden brown on top.
  6. Serve with whipped cream and additional fresh berries.
