Ingredients
  • 26 Oreos, or 1 standard package, crushed into fine crumbs (reserve some cookies for decoration and garnish)
  • 5 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, room temperature
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups heavy cream, whipped until stiff
Preparation
  1. Preheat oven to 350°F.
  2. Combine Oreo crumbs with melted butter and press into a 9-inch pie pan. Bake for 7 minutes and let cool completely.
  3. In a bowl beat cream cheese until smooth and lump free.
  4. Beat in pumpkin purée, sugar, pumpkin pie spice, and vanilla extract.
  5. Fold in whipped cream.
  6. Spread mousse mixture into the cooled pie crust, spreading evenly.
  7. Refrigerate for 2 hours.
  8. Garnish with more whipped cream and crushed Oreos if desired.
