Ingredients

  • 6 oz short pasta
  • 1 lb fresh strawberries
  • 3 tablespoons honey or maple syrup
  • 6 tablespoons sour cream
  • pinch salt
  • farmer’s cheese for topping
  • fresh mint leaves for garnish

Preparation

  1. Prepare dried pasta to package directions. Drain and set aside.
  2. While pasta cooks cut strawberries in half. Add to large bowl along with honey, sour cream, and pinch salt. Mash with back of fork until smoother, but with some large chunks of strawberry.
  3. Divide pasta between 2 plates (or more). Pour some strawberry sauce over each serving of pasta. Garnish with farmer’s cheese and a few torn mint leaves. Best eaten right away. Consume leftovers for within a few hours for best flavor.
