Ingredients
  • 1 ¾ cup all-purpose flour
  • 1 (3 oz) package pistachio pudding mix
  • ½ cup granulated white sugar
  • ½ cup light brown sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg
  • ½ cup chopped pistachios
  • 1 cup white chocolate chips
  • 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
Preparation
  1. Preheat oven to 325°F. Line a baking sheet with wax paper or lightly grease with cooking spray.
  2. In a large bowl, combine dry ingredients (pudding mix, flour, salt, and baking powder) and set aside.
  3. In a bowl, beat butter, vanilla, and both white and brown sugars until creamy. Beat in egg.
  4. Slowly combine dry ingredients with wet until well blended. Fold in pistachios and chocolate chips.
  5. Scoop out a rounded tablespoon of dough and place on cookie sheet. Once tray is filled, bake for 10-12 minutes or until cookies are just browned.
  6. Cool on wire rack before serving.
