Ingredients
  • 1 small red onion, quartered and thinly sliced
  • 16 oz elbow macaroni
  • 2 ribs celery
  • 1 green or yellow bell pepper
  • 2 tablespoons dill pickle relish
  • 2 cups Catalina dressing
  • 2/3 cup mayonnaise
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. Soak the red onion in a bowl of ice water while you prep the rest of the ingredients, but ideally for 30 minutes.
  2. In a large pot of salted boiling water, cook the macaroni according to package directions. Drain and spread pasta out on a baking sheet to cool.
  3. Thinly slice the celery and the bell pepper. Set aside.
  4. In a large bowl, whisk together the Catalina dressing, mayonnaise, relish, and season with salt and pepper.
  5. Drain the red onion and add to the bowl, along with the cooled pasta, and the celery and bell pepper. Stir to combine and adjust seasoning as needed.
  6. Chill until ready to serve. Enjoy!
