Ingredients

  • 1 cup sugar, divided
  • 1/4 cup baking cocoa
  • 3/4 cups milk, divided
  • 1 (9-inch) unbaked pie shell
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 egg
  • 1/8 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat oven to 350˚. Heat 3/8 cup milk in saucepan over medium heat. Stir in 1/2 cup sugar and 1/4 cup cocoa. Bring to a boil and cook until thickened (about 2 minutes), stirring constantly.
  2. Pour cocoa mixture into unbaked pastry shell and turn pie so that chocolate mix comes up the sides halfway. Set aside.
  3. In a medium mixing bowl mix together flour, baking powder, remaining sugar, and salt. Add egg, butter, remaining milk, and vanilla. Beat until batter is smooth.
  4. Spoon batter into pie shell so that the chocolate is completely covered.
  5. Bake for 40 minutes or until knife inserted in middle (not quite to the bottom) comes out clean. Can be served warm or cold and is best with a dollop of whipped cream.
