Ingredients
  • 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup butter, room temperature
  • 1/2 cup light brown sugar, packed
  • 2 tablespoon granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1/2 cups rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
Preparation
  1. Preheat oven to 350 degrees, and prepare baking sheets with parchment paper.
  2. Combine flour, cinnamon, baking soda, and salt in a medium bowl.
  3. In a separate bowl, cream butter and sugars together until fluffy. Add in egg and vanilla and mix to combine.
  4. Slowly pour flour mixture into the butter and sugar mixture, stirring to combine. Fold in oats, cranberries, and pecans. Chill dough for an hour.
  5. Scoop out dough and place 2 inches apart on prepared cookie sheet.
  6. Bake 10 minutes, or until edges are slightly browned. Cool on a wire rack, and enjoy!
