Ingredients
  • 1 (150z) can sliced peaches with juice
  • 1 (6oz) package peach jello
  • 1/3 cup white sugar
  • 2 cups boiling water
  • ½ teaspoon almond or vanilla extract
  • 1 (8oz) tub frozen cool whip topping, thawed
  • Optional: additional peaches or strawberries for garnish
Preparation
  1. Lightly grease a 9x13 dish.
  2. Drain the peach juice into a small cup and set aside, then dice peach slices.
  3. Add jello and boiling water to a large bowl and whisk until dissolved. Whisk in peach juice and refrigerate until mixture begins to thicken (about 10 minutes).
  4. Mix in vanilla or almond extract into the cool whip, then fold into the bowl of jello along with the diced peaches.
  5. Transfer mixture to the prepared dish and chill for a minimum of 4 hours. Serve chilled with additional fruit for garnish.
