Parmesan Smashed Broccoli

Ingredients

  • 6 cups broccoli florets
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1/2 cup Parmesan cheese, freshly grated
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Steam or boil broccoli until very tender, 3-4 minutes.
  3. Transfer broccoli to prepared sheet pan and use the bottom of a glass or measuring cup to smash.
  4. In a small bowl, stir together olive oil, breadcrumbs, parmesan cheese, garlic, and salt and pepper.
  5. Sprinkle broccoli with breadcrumb mixture.
  6. Bake in center rack of oven until crispy and golden, 20 minutes. Enjoy!
