Ingredients
  • 2 tablespoons unsalted butter
  • 1/2 cup yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 1 cup long-grain white rice
  • 2 1/2 cups chicken broth
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. Preheat oven to 375°F.
  2. In a skillet over medium heat, melt butter.
  3. Add onions and cook until starting to soften, about 4 minutes. Add garlic and cook 1 minute more.
  4. Increase heat to medium-high and stir in orzo. Toast until orzo is deeply golden, stirring frequently, about 5 minutes.
  5. Stir in rice and cook 1 minute more. Transfer to a 1.5 quart baking dish with a lid.
  6. Pour 1 cup of the broth over rice and orzo, season with salt and pepper, and stir. Cover dish and bake 25 minutes.
  7. Uncover, add remaining broth, cover and bake until rice is tender, about 35 minutes more.
  8. Fluff with fork, adjust seasoning as needed and serve. Enjoy!
