Ingredients
  • 1 lb ground beef
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 3 cups chicken broth
  • 1 cup salsa
  • 1/2 lb large shell pasta
  • 1 cup cheddar cheese, grated
  • 1 cup Monterey Jack cheese, grated
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. Heat a large skillet over medium heat. Add ground beef. Once half is cooked, add onion and continue cooking until no longer pink.
  2. Drain grease if needed. Add garlic and cook 30 seconds.
  3. Stir in taco seasoning, salsa, and chicken broth. Bring to a simmer and stir in pasta.
  4. Cover and let simmer until pasta is cooked through and most liquid has absorbed, 10-15 minutes, stirring occasionally.
  5. Stir in cheeses and season to taste. Enjoy!
