One-Pot French Onion Chicken and Rice Skillet

Ingredients

  • 1 packet French onion soup mix
  • 1 lb boneless skinless chicken thighs or breasts
  • 4 tablespoons olive oil, divided
  • 1 large white onion, halved and sliced
  • 1 teaspoon dried thyme
  • 1 1/2 cups long grain rice
  • 2 cups low-sodium beef broth
  • 1/3 cup heavy cream
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  1. If using chicken breasts, pound out to an even thickness.
  2. In a large bowl, toss together the chicken and half of the onion soup mix.
  3. To a large skillet, add 2 tablespoons of the olive oil and heat over medium-high heat. Brown the chicken on both sides, 2-3 minutes per side, but don't worry about cooking it through. Remove to a plate and set aside.
  4. Add remaining olive oil to the skillet and reduce heat to medium. Cook the onions until golden brown and soft, about 10 minutes. Stir in thyme.
  5. Stir the rice into the skillet along with the remaining onion soup mix. Stir in broth and cream and bring to a simmer.
  6. Add the chicken back to the pan, cover, and reduce heat to medium-low. Let simmer until liquid has absorbed and chicken is cooked through, about 20-25 minutes.
  7. Season to taste with salt and pepper and serve. Enjoy!
