Ingredients
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 whole egg plus 2 eggs, separated
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cup semi-sweet chocolate chips
  • 1 cup miniature marshmallows
  • 1 cup brown sugar
Preparation
  1. Preheat oven to 350°F and grease a 9x13-inch baking pan with butter or nonstick spray.
  2. In a large bowl, beat together the butter, granulated sugar, vanilla, and 1 whole egg and 2 egg yolks with an electric mixer until creamy and smooth.
  3. Add flour, baking powder, and salt, and mix until incorporated. Spread batter into prepared pan.
  4. Sprinkle chocolate chips over the top of the batter, followed by the mini marshmallows.
  5. In a large clean bowl, beat the egg whites with an electric mixer on high until stiff peaks form, about 2 minutes. Gently fold in the brown sugar until smooth.
  6. Spread egg whites on top of marshmallow layer and bake until top is golden brown, 30-35 minutes.
  7. Allow to cool completely before slicing and serving. Enjoy!
