Mom's Chicken Marinade

Ingredients

  • 1/2 cup olive oil
  • 1/2 cup low sodium soy sauce
  • 1/4 cup fresh lemon juice
  • 2 tablespoons whole grain mustard
  • 2 teaspoons dijon mustard
  • 2 teaspoons liquid smoke
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 boneless skinless chicken breasts

Preparation

  1. Place chicken breasts in a large ziplock bag or container with tight-fitting lid.
  2. In a small bowl or liquid measuring cup, whisk all marinade ingredients for 1-2 minutes until well combined.
  3. Pour marinade over chicken and seal bag or container.
  4. Place chicken in fridge to marinate for 2-3 hours.
  5. When ready to cook: Bake or grill chicken at 400 degrees F until internal temperature reaches 165 degrees F and juices run clear.
