Middle Eastern Rice Pudding

A rice pudding without thickeners or eggs.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 cup short grain rice
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3 tablespoons granulated sugar
  • 1 cinnamon stick
  • 6 whole cloves
  • 1/4 teaspoon fine salt
  • 1/2 cup water
  • 2 teaspoons vanilla extract
  • 1/3 cup evaporated milk
  • 1/4 cup roughly chopped pistachios

Preparation

  1. In a medium-sized pot melt butter and then add in the rice. Stir until the rice is coated in the butter.
  2. Gradually whisk in the milk and cream in small intervals.
  3. Add in sugar, whisking to combine.
  4. Add in cinnamon stick, cloves and salt.
  5. Bring to a boil, reduce to a simmer, cooking until the rice is cooked through and the liquid is absorbed by the rice, about 30 to 40 minutes.
  6. Stir the simmering mixture regularly, making sure nothing is sticking to the side and bottom of the pot. If the mixture is looking too dry, add water 2 tablespoons at a time. You want the pudding to still be a little wet and not extremely dry.
  7. Once the rice is softened, add the vanilla and evaporated milk, stirring to combine. Portion out into bowls, top with pistachios, and enjoy!
