Ingredients
  • 1 1/2 lbs large shrimp, peeled
  • 1 lb asparagus
  • 3-4 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 red onion, cut into wedges
  • 2 teaspoons oregano
  • 2 teaspoons paprika
  • Juice of 1 lemon
  • 1 cup kalamata olives, pitted
  • 1 cup feta cheese
  • 1/4 cup fresh parsley, chopped
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. Preheat oven to 450°F.
  2. In a large bowl, toss together shrimp, 2 tablespoons olive oil, garlic, salt, pepper, paprika, oregano, and lemon juice.
  3. Wash and trim asparagus and arrange on a rimmed baking sheet along with the red onion. Drizzle with 1 tablespoon of the oil.
  4. Place shrimp on top of asparagus and onions and bake for 10 minutes.
  5. Remove from oven and top with crumbled feta, olives, parsley, and drizzle with a bit more olive oil. Enjoy!
