Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 cups corn kernels, fresh, frozen, or canned
  • 1 cup milk
  • 1 cup sour cream
  • 6 tablespoons butter, melted
  • 8 oz bacon, cooked and chopped
  • 1 (4 oz) can diced green chiles
  • 1 1/2 cups cheddar cheese, grated and divided
Preparation
  1. Preheat oven to 350°F and grease a 9x13-inch baking dish with butter or nonstick spray.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  3. Add corn, sour cream, and milk, and stir to combine.
  4. Add butter, 3/4 of the bacon, green chiles, and 1 cup of the cheese and stir to combine.
  5. Pour mixture into prepared baking dish and top with remaining bacon and cheese. Bake until center is set and top is golden brown, 40-45 minutes. Enjoy!
