Ingredients
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 Tbsp fresh lemon juice
  • 3 tsp lemon zest
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 4 to 8 drops yellow food coloring (optional)
  • 1 to 2 cups powdered sugar for coating
Preparation
  1. Combine flour, baking soda, and salt. Set aside. In a separate bowl cream together butter and sugar. Add egg and egg yolk and blend until smooth. Whisk in lemon juice, lemon zest, vanilla extract, lemon extract, and food coloring. Add in dry ingredients and combine well. Refrigerate for at least 2 hours.
  2. When ready to bake preheat oven to 400˚F. Pour powdered sugar in large bowl. Roll dough into 1” balls using hands. Roll dough balls in powdered sugar and place 2” apart on greased or lined baking sheet.
  3. Bake for 10-12 minutes or until edges are set and centers no longer jiggle. Cookies will have crackled appearance. Allow to cool before serving.
