Ingredients

  • 1 large head cauliflower
  • 1-2 tablespoons cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon chicken or vegetable bouillon
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 teaspoon chopped fresh chives, for garnish
  • butter for serving (optional)

Preparation

  1. Trim the cauliflower of its leaves. Place the whole head into a pot of boiling water and cook for 6-7 minutes. Remove from pot and pat with paper towels to remove excess water.
  2. Chop into smaller pieces and place into a food processor. Puree until smooth. Pour out into a large mixing bowl and add remaining ingredients. Serve immediately with a pat of butter on top if desired.
