Jerk Chicken Stir Fry

A flavorful stir fry with a slight kick.

Jerk Chicken Stir Fry

Ingredients

  • 1 lb boneless skinless chicken breast, cut into strips
  • 2 teaspoons jerk seasoning
  • 1 tablespoon vegetable oil
  • 5 green onions, chopped
  • 1 bell pepper, sliced into strips
  • 1 11-oz can mandarin orange segments
  • 1/2 cup peanuts
  • Salt and pepper to taste

Preparation

  1. Place chicken in a bowl with jerk chicken mixture. Make sure all pieces are coated. Allow to marinate in the refrigerator (covered) for at least an hour or up to overnight.
  2. If you don’t have jerk seasoning you can make a substitute by combining 1/8 teaspoon each of garlic powder, paprika, allspice, red pepper flakes, nutmeg, cayenne pepper, onion powder, and thyme.
  3. When ready to make stir fry begin cooking rice before other ingredients are prepared.
  4. In a large skillet on medium-high heat cook chicken for 10-12 minutes in tablespoon of oil.
  5. Add green onions and pepper and cook for 3 minutes or until vegetables are barely cooked and still crisp.
  6. Remove from heat and stir in mandarin orange segments. Add salt and pepper to taste. Top servings of rice with stir fry and sprinkle peanuts on top.
