Ingredients

  • 1/4 cup butter, softened
  • 8 oz cream cheese, softened
  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar
  • 2 1/2 cups flaked coconut
  • Ground cinnamon, as needed

Preparation

  1. In a large bowl, beat together the butter and cream cheese with an electric mixer until smooth. Add the vanilla and powdered sugar and beat again to fully incorporate.
  2. Using a wooden spoon, or your hands if needed, mix in the coconut. Chill mixture until semi-firm, about 30 minutes.
  3. Roll chilled mixture into oblong balls that resemble potatoes.
  4. Place cinnamon in a shallow dish and roll candies in cinnamon to coat.
  5. Arrange on a parchment paper-lined baking sheet and chill once again until firm. Enjoy!
