Ingredients
  • 3 cups whole milk
  • 1 cup white instant rice, uncooked
  • ⅓ cup raisins (optional)
  • ¼ cup white sugar
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 ½ teaspoon vanilla extract
  • 2 eggs, beaten
Preparation
  1. In a medium sized saucepan combine milk, rice, raisins, sugar, vanilla, cinnamon, and salt and bring to a boil over medium-high heat. Stir continuously to prevent sticking.
  2. Once mixture has been brought to a boil, reduce heat to medium-low and simmer for 5 minutes, stirring every minute.
  3. Reduce heat to low and very slowly mix in beaten eggs while constantly stirring. Continue stirring and cook for one minute until the consistency has thickened slightly.
  4. Remove from heat and pour into desired serving dish and let stand 20 minutes. Garnish with additional cinnamon if desired.
