Ingredients
  • 2 to 3 tablespoons olive oil
  • 2 medium onions, roughly chopped
  • 1/2 pound carrots, peeled and chopped
  • 1/2 pound celery, small diced
  • 1 large apple, peeled and finely diced
  • 1 clove garlic, minced
  • 6 to 8 basil leaves, chopped
  • 1/2 lb fresh tomatoes, cored and roughly diced
  • 2 15-ounce tomato sauce
  • 4 cups water
  • 1 cup heavy cream
  • Kosher salt and freshly cracked black pepper, to taste
Preparation
  1. In a large pot heat the olive oil and saute onions, carrots, and celery for 10 minutes.
  2. Add in apples, garlic, and basil, cooking until the garlic is fragrant about 30 seconds to 1 minute.
  3. Add in tomatoes, tomato sauce, and water and cook for 30 minutes.
  4. Blend the soup in batches until completely smooth, transfer back into the pot.
  5. Add in the cream and cook for another 5 minutes.
  6. Season with salt and pepper, serve, and enjoy.
