Hasty Pudding Dessert

This historical dish was popular with American settlers, but has a home in modern cooking as it's so easy to make. Hasty pudding lives up to its name with delicious, spiced flavors and speedy preparation.

Ingredients

  • 1/3 cup cornmeal
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon or to taste
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • vanilla ice cream for serving

Preparation

  1. Preheat oven to 350˚F. In mixing bowl whisk together cornmeal, spices, and salt. Set aside.
  2. Mix together milk, cream, molasses, and brown sugar in saucepan and bring to almost boiling over medium-high heat. Whisk in cornmeal mixture to pan and reduce heat to medium-low. Cook until almost boiling, about 3 minutes, stirring often. Mixture will look like pumpkin pie filling in texture and color and should be smooth.
  3. Pour into a greased 6” cast iron skillet or small baking dish. Bake for 20 minutes. Carefully remove from oven and stir. Return to oven and bake for 20 more minutes. When top is browned and sides slightly pull away from pan it is ready.
  4. Allow to cool for 15 minutes before serving. Serve warm with a scoop of vanilla ice cream. You can also add some pecans as an optional topping.
