Halloumi Fajitas

Ingredients

  • 2 (7 oz) blocks halloumi
  • 2 tablespoons vegetable oil
  • 1 red onion, sliced
  • 2 bell peppers, sliced
  • salt and pepper to taste
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • juice of 1 lime
  • 6 (10”) flour tortillas
  • 1 tablespoon freshly chopped cilantro
  • 3 tablespoons guacamole
  • 3/4 cup salsa

Preparation

  1. Cut each block of halloumi into strips, taking care not to break them. Heat oil over medium-low heat then add in halloumi. Cook 2-4 minutes on each side or until golden in color. Remove from pan.
  2. In same skillet add in onion and peppers, and season with salt and pepper. Cook over medium-high heat for 8 minutes or until softened, adding garlic after 5 minutes of cooking. Stir in paprika, chili powder, cumin, and lime juice and cook 1 minute more. Remove from heat and add halloumi, tossing to coat each piece.
  3. Assemble fajitas by adding some cilantro to each tortilla then adding filling. Serve immediately with salsa and guacamole.
