Gnocchi Stuffing

This flavorful Gnocchi Stuffing has all the herbs and veggies of a classic bread stuffing, but with pillowy gnocchi instead! It's a fun way to enjoy this holiday classic.

Ingredients

  • 1 lb gnocchi
  • 1 tablespoon olive oil
  • 1 white onion, diced
  • 3 celery stalks, chopped
  • salt and pepper to taste
  • 1 clove garlic, minced
  • 10 oz mushrooms, sliced
  • 2 tablespoons vegetable broth or water
  • 2 teaspoons chopped fresh rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried ground sage

Preparation

  1. Cook gnocchi to al dente per package directions. Drain and set aside.
  2. In large skillet heat oil over medium. Add celery and onion and cook for 5 minutes. Add mushrooms and garlic then cook for 5 more minutes. Add salt and pepper to taste. Deglaze pan with broth.
  3. While that’s cooking preheat oven to 350˚F. In 7”x11” (2-quart) baking dish combine gnocchi, vegetables, and herbs. Season with more salt and pepper to taste.
  4. Bake for 20-25 minutes or until golden brown on top. Set oven to broil for 3-5 minutes to brown top of stuffing.
