Gluten-Free Chocolate Sea Salt Cookies

Ingredients

  • 2 tablespoons unsalted butter, room temperature
  • 1/2 cup packed brown sugar
  • 1/4 cup almond butter
  • 1 egg, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 1/4 cups almond flour, sifted
  • 1/2 cup semisweet or milk chocolate chips
  • flaky sea salt

Preparation

  1. Preheat oven to 350˚F. In a large bowl cream together butter and sugar. Stir in almond butter, egg, and vanilla. Sift in baking soda, salt, and almond flour. Then fold in chocolate chips.
  2. Roll into 2-teaspoon size balls and place on lined baking sheets 2 inches apart. Flatten cookies gently using finger then sprinkle with sea salt.
  3. Bake for 10-12 minutes or until chocolate is melted. Allow to cool for 5 minutes before transferring to wire rack to cool completely.
