Ingredients
  • 2 cups heavy cream, chilled
  • 1 ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 3 eggs
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • ½ cup raw pistachios, finely chopped
  • Powdered sugar for dusting
Preparation
  1. Preheat oven to 350 degrees F and grease and flour a 9-inch springform pan or a 9-inch cake pan.
  2. Pour whipping cream into a large bowl and beat until stiff peaks form.
  3. In a small bowl, sift together the flour, salt, and baking powder until well combined.
  4. In another large bowl, beat egg, sugar, and vanilla for 2-3 minutes until light and airy.
  5. Slowly mix in the dry ingredients until just combined, then gently fold in the pistachios and whipped cream. Do not overmix.
  6. Transfer batter to the prepared pan and bake for 55-60 minutes or until an inserted toothpick comes out clean.
  7. Allow cake to cool for 15 minutes then remove from pan. Dust with powdered sugar and additional chopped pistachios if desired.
