For the Sauce:
  • 1 cup light brown sugar
  • 1 cup water
  • 1/2 cup maple syrup
For the Cake:
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1/4 cup oil
  • 3/4 cup light brown sugar
  • 1 large egg, room temperature
  • 3/4 cup milk, room temperature
To make the Sauce:
  1. In a small saucepan combine brown sugar, water, and maple syrup. Bring to a boil, reduce to a simmer and let it cook for 6 to 8 minutes. Set aside.
To make the Cake:
  1. Preheat oven to 350°F. Grease a 9x9 square baking dish with baking spray, set onto a baking sheet and set aside.
  2. In a small bowl, whisk together flour, baking powder, and salt, set aside.
  3. In a larger bowl whisk oil, brown sugar, egg, and milk until well combined.
  4. Add dry ingredients gradually into the wet ingredients.
  5. Pour batter into prepared pan. Gently pour hot syrup mixture over the cake.
  6. Bake for 30 to 35 minutes until a toothpick inserted comes out clean and the sauce is bubbling underneath the cake. Serve warm.
