Ingredients
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped or grated
  • 4 garlic cloves, minced
  • 1 teaspoon ground coriander
  • 1/2 to 1 teaspoon red chili flakes
  • 1 28-ounce can tomato sauce or puree
  • 1 to 2 tablespoons distilled white vinegar
  • Kosher salt and freshly cracked black pepper, to taste
Preparation
  1. In a saucepan, heat olive oil and add in onions, cooking on a medium-low heat until translucent and softened, about 6 to 8 minutes.
  2. Add in garlic, stirring to combine, cook for 30 seconds or until fragrant.
  3. Add in coriander and chili flakes, stirring to combine.
  4. Carefully pour in tomato sauce, stir the sides and bottom of the pot to incorporate everything.
  5. Bring to a simmer and cook covered until the sauce thickens, about 15 minutes, stirring frequently.
  6. Add in the vinegar and season with salt and pepper to taste.
Not your average Sunday gravy.
