Ingredients
  • 1 (14 oz) can sweetened condensed milk
  • 1/3 cup butter
  • 1/3 cup brown sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla
  • 1 cup peanuts, roughly chopped
  • 1-2 sleeves Ritz crackers
Preparation
  1. Line a cookie sheet with parchment paper and arrange crackers in a single layer.
  2. In a small saucepan, combine sweetened condensed milk, butter, and brown sugar. Cook over medium heat for 7-8 minutes, stirring often.
  3. Reduce heat to low and whisk in milk, vanilla, and peanuts until smooth. Cook for 2 additional minutes or until mixture is thick, then remove from heat.
  4. Use a cookie scoop to top each cracker with the caramel mixture.
  5. Allow cookies to fully cool, then store in an airtight container.
