Ingredients
  • 1 large english cucumber, diced
  • 12 oz bag shelled edamame, thawed
  • 1 cup diced green onion
  • ½ cup fresh cilantro, roughly chopped
Dressing:
  • ¼ cup olive oil
  • ¼ cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 tablespoon fried chili in oil
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Salt to taste
Preparation
  1. Add the diced cucumber, edamame, green onion, and cilantro to a large bowl.
  2. In a small bowl, whisk together all dressing ingredients and add salt to taste. Pour dressing over the salad and toss until evenly combined.
  3. Serve chilled.
