Ingredients
  • 1 cup parsley, chopped
  • 1 medium yellow onion, chopped
  • 2-3 medium Yukon Gold potatoes, peeled and sliced 1/2-inch thick
  • 8 large eggs
  • 1 1/2 tablespoons olive oil, plus extra if needed
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 2 tablespoons milk
Preparation
  1. Preheat oven to 375°F. Spray 9-inch pie plate with cooking spray.
  2. Heat 1 1/2 tablespoons of oil in deep skillet. Sauté onions for 3-4 minutes, stirring frequently.
  3. Add potatoes and more oil, if needed, to skillet. Cook for 5 minutes, stirring frequently, until potatoes are soft.
  4. Pour potato and onion mixture into prepared baking dish.
  5. Whisk eggs with milk, and season with a pinch of salt and black pepper. Pour over potatoes and bake 40-45 minutes, checking around 35 minutes, for doneness.
  6. Cool to set, 5 minutes, before serving.
We think this is pretty good for breakfast or dinner!
