Freezer Pie Crust

Servings: Serves 2 9-inch pie crusts or 6 3-inch tart crusts

Ingredients

  • 2 1/2 cups all-purpose flour, divided
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter (2 sticks), cubed
  • 1/2 cup ice water

Preparation

  1. Combine 1 1/2 cups flour, sugar and salt in large bowl or food processor. Add butter. Process 15 seconds or mix with pastry cutter until mixture begins to clump and flour is coated.
  2. Stir in remaining 1 cup of flour until incorporated and dough appears crumbly. Sprinkle with ice water. Fold dough with a rubber spatula until sticky.
  3. Divide dough in half. Flatten each half to 4-inch diameter. Wrap in plastic wrap and seal in freezer-proof container. Thaw overnight in refrigerator before using as usual.
