Ingredients
  • 4 cups kale, chopped
  • 1 cup cooked quinoa
  • 1/4 cup sliced almonds
  • 1/4 cup raisins
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh squeezed lemon juice
  • 1 teaspoon garlic powder
  • 2 tablespoons fresh dill, chopped (or 1 teaspoon dried)
  • 1 pinch salt
  • 1 pinch black pepper
Preparation
  1. Whisk together olive oil and lemon juice in a small bowl. Add garlic, dill, salt and pepper. Whisk until thoroughly combined.
  2. Place chopped kale in a large bowl and pour in vinaigrette dressing. Toss to coat.
  3. Toast almond slivers in a dry pan over medium heat until lightly browned.
  4. Add quinoa, almonds and raisins to kale. Toss to combine.
  5. Top salad with crumbled feta cheese and serve.
