Ingredients
  • 1 16-oz package cheese tortellini
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup fresh basil, sliced
  • 1/3 cup sun-dried tomatoes, roughly chopped
  • 1 (14 oz) can chopped artichokes, drained (See Note.)
  • 8 oz fresh mozzarella pearls or balls
For the dressing:
  • 1 clove garlic, minced
  • 1/2 cup mayonnaise
  • 1/4 cup basil pesto
  • 1/4 cup half and half (or milk)
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • Kosher salt and freshly ground black, to taste
Preparation
  1. Bring a large pot of salted water to a boil. Stir in tortellini and cook according to package directions. Do not overcook. Drain and rinse under cool water.
  2. Add tortellini, onion, basil, sun-dried tomatoes, artichoke hearts, and mozzarella to a large bowl.
  3. Whisk together dressing ingredients, season to taste with salt and pepper, and pour over salad ingredients.
  4. Toss to combine and chill until ready to serve. Enjoy!
  5. Note: If you cannot find canned chopped artichokes, you can substitute another canned artichoke heart or quartered artichokes and simply drain and chop them.
