Ingredients
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 2 large carrots, sliced
  • 2 ribs celery, chopped
  • 4 cloves garlic, minced
  • 2 large boneless skinless chicken breasts
  • 9 cups chicken broth
  • 1 (9 oz) package cheese tortellini
  • 1/3 cup heavy cream
  • 1/2 cup baby spinach
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped, for serving
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. Place a large pot or Dutch oven over medium heat. Add olive oil, onion, carrots, and celery and cook until soft, about 5 minutes. Add garlic and cook 1 minute more.
  2. Add chicken breasts, chicken broth, thyme, 1 teaspoon salt, 1/4 teaspoon black pepper and bring to a simmer.
  3. Let simmer until chicken is cooked through, 15 minutes. Remove chicken to a cutting board.
  4. Add tortellini to simmering broth. Chop or shred chicken and add back to pot.
  5. Once tortellini has cooked through, about 10 minutes, turn off heat. Stir in cream, spinach, and season to taste with salt and pepper. Serve with fresh parsley and enjoy!
