  • 3 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 1/2 cups mayonnaise
  • 3 teaspoons Dijon mustard
  • 1 teaspoon Tabasco sauce
  • 1 tablespoon water
  • 1 teaspoon paprika
  • 1 teaspoon Cajun seasoning
  • 2 teaspoons salt
  • 1/2 teaspoon white pepper
  • 1/2 cup shallots, finely minced
  • 1 small red bell pepper, diced
  • 1 cup celery finely, diced
  • 1/4 cup fresh parsley, chopped, for garnish
Preparation
  1. Bring water to boil for pasta. Cook according to package directions and drain. Rinse with cold water and toss with 1 tablespoon olive in a large bowl. Set aside.
  2. In a medium bowl pour in 1 tablespoon olive oil. To that whisk in vinegar and lemon juice. To the emulsion add mayonnaise, mustard, Tabasco sauce, water, and blend well. Mix in shallots, bell pepper, celery, paprika, Cajun seasoning, salt, and pepper.
  3. Add dressing to pasta and stir well to coat. For best taste let mixture sit together for at least half an hour so that flavors can combine.
