Cream Cheese Crumb Bars

Ingredients

  • For the crust and topping:
  • 1/3 cup butter, softened plus 1 tablespoon, melted
  • 1/3 cup brown sugar plus 2 tablespoons, divided
  • 1 cup all-purpose flour
  • 1 tablespoon cinnamon
  • 1 cup walnuts, chopped and divided
  • 1/4 cup granulated sugar
  • 1 (8 oz) package cream cheese, softened
  • 1 egg, beaten
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg

Preparation

  1. Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper or foil, leaving some overhang so you can easily pull the bars out later.
  2. In a large bowl, cream together the butter and 1/3 cup of the brown sugar with an electric mixer until fluffy. Add flour and cinnamon and mix until just combined. Stir in 1/2 cup of the chopped walnuts until a crumbly mixture forms. Reserve one cup of the mixture and set aside.
  3. Press remaining mixture into prepared pan and bake for 12 minutes. Place on wire rack to cool while you make the filling and crumble topping.
  4. To the reserved crumb mixture, add remaining brown sugar, remaining chopped nuts, and one tablespoon of melted butter. Mix until well combined and set aside.
  5. In a large bowl, beat together the granulated sugar and cream cheese until light and fluffy. Add egg, milk, vanilla, and nutmeg and beat until light and creamy, about 3 minutes.
  6. Pour mixture over cooled crust and top with reserved crumble topping, pressing it very lightly into the mixture.
  7. Bake until set, about 25 minutes, and remove to a wire rack to cool completely. Once cool, lift bars out of pan by parchment paper or foil and slice and serve. Enjoy!
