Ingredients

  • 1 lb ground beef
  • salt and pepper to taste
  • 1 (24 oz) jar herb tomato sauce, divided
  • 1/2 cup bread crumbs
  • half an onion, diced
  • half green bell pepper, chopped
  • 1/2 teaspoon oregano
  • 1 1/3 cup Minute Rice
  • 1 cup shredded cheddar cheese, divided
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/2 cup salsa
  • 1/2 cup sour cream

Preparation

  1. Preheat oven to 350˚F. Brown ground beef over medium heat, about 8-10 minutes. Drain and season with salt and pepper. Set aside.
  2. In a large bowl combine 1/2 cup tomato sauce with beef, bread crumbs, onion, salt and pepper to taste, bell pepper, and oregano. Spread this on the bottom of a deep pie pan or 9”x9” baking dish - taking it halfway up the side of the dish.
  3. In another bowl combine remaining tomato sauce with rice, water, and 1/2 cup cheese. Add rice on top of beef “crust” and level with back of spoon. Top with remaining tomato sauce. Bake for 25 -35 minutes or until rice is cooked. Add remaining cheese and bake for 10 minutes more or until cheese is melted.
  4. Serve with a spoonful of salsa and dollop of sour cream.
