Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 cup confectioners' sugar, plus extra for dusting
  • 3/4 cup salted butter, softened
  • 1 teaspoon vanilla extract
  • 1 teaspoon or almond lemon extract
Preparation
  1. In a large mixing combine flour, cornstarch, and sugar. In another bowl cream butter until lightened in color. Add dry ingredients and flavorings to creamed mixture and stir until just combined. Cover and refrigerate for 1 hour.
  2. When ready to bake preheat oven to 300˚F. Line a cookie sheet with parchment paper and roll dough into 1” balls placed 2” apart on pan. Use back of a fork to gently flatten balls. Use fork in 1 direction only.
  3. Bake on center rack for 18-20 minutes. Allow to cool at room temperature for 1 hour before dusting with powdered sugar and serving.
So little work, such big flavor.
