Ingredients
  • 3 cups diced potatoes
  • 4 cups chopped corned beef, cooked
  • 1/4 cup butter
  • 3/4 cup broth, heated
  • Salt and pepper to taste
Preparation
  1. Boil potatoes in salted water until just shy of fork tender. Drain well.
  2. Mix potatoes with beef. Set aside.
  3. In a large skillet melt butter over medium heat. Add broth and then add beef-potato mixture.
  4. Cover with lid and let cook for 14-16 minutes or until a golden brown crust has formed on the bottom.
  5. Season with salt and pepper. Invert onto a platter or serve in skillet. Optional: top with fresh parsley and/or poached eggs.
