Ingredients

  • 1/4 cup olive oil
  • 3-4 cloves garlic, pressed
  • 2 onions, finely diced, plus extra to serve
  • 1-2 bell peppers, finely diced
  • 5 (14 oz) can black beans, drained and rinsed
  • 2-3 cups water
  • 1 tablespoon salt
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon sugar
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • Optional: Cooked rice to serve

Preparation

  1. Heat oil in large stockpot and ad garlic. Cook for 1 minute. Add onion and pepper to pan and cook for 10 minutes. Add beans to pot along with water.
  2. Add spices and sugar. Simmer for 20-30 minutes, covered, or until tender. Add water if too dry.
  3. Pour over rice if desired and serve with some extra onion as an optional garnish.
