Ingredients
  • 1 ⅓ cups almond flour
  • 1 cup butter, room temperature
  • 1 egg
  • 1 ½ teaspoons almond extract
  • 2 cups flour
  • 1 ¼ cup granulated sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup sliced almonds
  • 1 egg, beaten, for egg wash
Preparation
  1. In a large bowl, combine almond flour and butter, then mix until smooth. Add one egg and almond extract and mix until just combined.
  2. Mix in flour, sugar, baking soda, and salt until ingredients are fully incorporated.
  3. Wrap dough tightly in plastic wrap and chill for 4 hours or overnight.
  4. When ready to bake, preheat oven to 325 degrees F and grease two baking sheets with parchment paper.
  5. Roll dough into small balls (about 1 ½ tablespoons portions), arrange on baking sheets, and press down to flatten. Press sliced almonds into the top to decorate and brush top with egg wash.
  6. Bake for 12-14 minutes or until edges just begin to turn golden in color.
  7. Allow cookies to fully cool before handling.
