Ingredients
  • 2 cups elbow macaroni, uncooked
  • 3 cups chicken, cooked and shredded
  • 2 (10 oz each) cans condensed cream of chicken soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 (10 oz) package frozen chopped spinach, thawed and liquid squeezed out
  • 2 cups Swiss cheese, grated
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 cup breadcrumbs
  • 2 tablespoons butter, melted
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. Preheat oven to 350°F.
  2. In a large pot of boiling salted water, cook macaroni according to package directions. Drain and set aside.
  3. In a large bowl, combine chicken, soup, mayo, sour cream, spinach, Swiss cheese, garlic powder, and thyme. Season with salt and pepper and stir to combine.
  4. Stir macaroni into mixture then transfer to a 9x13-inch baking dish.
  5. Sprinkle parmesan over casserole. Toss breadcrumbs and butter together and sprinkle over casserole.
  6. Bake until golden brown and bubbly, about 40 minutes. Enjoy!
